UV Colour

In a study by UV spectrophotometry, sugar colourants were analysed in respect to absorbancies at high wavelengths, higher than 273nm, and the absorbancies at low wavelengths, lower than 273nm (Bento, 1995a). The results of this study are presented at Table 3. The explanation of the meaning of Llf and Hlf parameters is done in the publication “Application of UV Spectrophometry to study sugar colourants through the refining process”, (Bento, 1995a), in Annex IV.

It was proved that sugar colourants Hlf increases with their anionic charge (Bento, 1995a). So, through the values presented in Table 3, we can consider that HADP present a low anionic charge, inferior to one of melanoidins, but superior than the one of caramels. These results are in accordance with the data obtained by sucrose chromatography where HADP presents two peaks, one polar and other apolar: melanoidines one peak (polar) and caramels one peak (apolar).
